one hand carrot cake

since having this little baby I've been slowly acquiring skills using one hand/arm. like making tea, tying up hair, folding clothes, buying groceries, typing emails and more recently making carrot cake. though everything does take a lot longer! anyway, I think you will like this wonderful, fragrant cake; the addition of almond meal makes it deliciously moist and the lemon zest + spices packs a gentle punch.

125g soften butter
1 cup brown sugar
3 eggs
zest of 1 lemon
3/4 cups SR flour
1/2 tsp baking powder
3/4 cup ground almonds
1/2 cup chopped walnuts
1 tsp cinnamon
pinch of cloves, nutmeg ground
1/2 tsp ground ginger
2 cups grated carrot
pinch sea salt

preheat moderately hot oven (190'c). beat butter and sugar until pale and creamy. beat in one egg at a time. add zest. stir in flour, baking powder, almond meal, walnuts, carrots, spice and salt. mix well. bake in a lined loaf tin for 30-45 minutes or until golden and risen. cool for 10 minutes before removing from the pan. enjoy on its own or with a dollop of creme fraiche or mascapone!

p.s. (if it lasts that long) its one of those cakes that tastes even better on the second or third day, the spices just meld beautifully...
