oh clementines!

Clementines are in season at the moment and they are especially good; easy to peel, juicy, with few seeds (or none). they come from the nearby sunny spain. i once visited spain a few years ago in wintertime and was taken with the sight of citrus trees laden with ripe and bulging fruit along streets and in parks...

this recipe is a take on orange and poppyseed muffins - with the addition of clementines for their soft delicate flavour.

you will need:
1 1/2 cups self-raising flour
1 tsp baking powder
1/2 caster cup sugar
2 tablespoons poppy seeds
2-3 clementines (or mandarins) - zested & juiced
75g melted butter (or vegetable/olive oil)
1 egg, lightly beaten
150ml of natural yoghurt

heat oven to 180'c. in a large bowl combine flour, baking powder, sugar, poppy seeds and a pinch of salt. in a separate bowl whisk together wet ingredients - pour into dry ingredients being careful not to over mix (you want the batter to be a bit lumpy). pour into muffin or cake tin and bake for 15-25 minutes or until risen and golden.
